Strawberry, vanilla, cinnamon biscuit and white chocolate tiramisù
Make the cream first. Blend the mascarpone cheese with the egg yolks, icing sugar and vanilla seeds, which should be first crushed with the tip of a knife.
Next, soak the cinnamon biscuits in coffee mixed with a little sparkling wine. Place in a dish.
Arrange the strawberries on top of the cream. Boil the sugar in a little water, until it forms a stiff syrup (when it is boiling hard and is caramelising around the edges of the pan (140 °C)).
When this point is reached, add the crushed milk chocolate to the pan and mix until it begins to form small, earth-like bubbles. Leave to cool and then spread over the cream.
Serve cold.

1 vanilla pod
50 g sugar
50 g milk chocolate
